Covino to launch chef residency program in 2025

Best Local Restaurant Covino has announced that current head chef George Prole will leave in the new year. This makes way for a new residency program, where chefs will be encouraged to ‘pop up’ in the Chester space for 3-6 months at a time. The first resident chef will be Harry Guy, whose CV includes L’Enclume, The Savoy Grill and Aulis.


Timberyard appoint executive chef

Following on from the news of James Murray’s departure, Edinburgh’s Timberyard has announced current head chef Bart Stratfold will step into the executive chef role, overseeing the entire kitchen. At their sister restaurant and wine bar, Montrose, things remain unchanged with Moray Lamb leading the kitchen.



Ollie Dabbous to depart HIDE

After seven years at the helm of Mayfair’s HIDE, it has been announced that chef-patron Ollie Dabbous will leave in early 2025. Current group executive chef Josh Angus will move into the chef-director role.
