Alain and Michel Roux reveal plans for new Edinburgh brasserie and bar
Alain Roux, chef patron of The Waterside Inn at Bray, and his father, Michel, are launching a new restaurant at The Balmoral in Edinburgh. Alain will take up the position of 'Signature Chef’ at the new brasserie and bar that will replace Hadrian’s Brasserie and The Balmoral Bar. The new restaurant and bar will offer ‘classic French dishes inspired by the finest Scottish ingredients’. Alain Roux said: ‘I want to serve the dishes that I love to cook myself at home and seek out with family and friends when we go out to eat. It will be an exciting menu, informed by my French heritage but totally inspired by Scotland.’ The name of the new brasserie has yet to be revealed but it will open in May.
Michael O’Hare relaunches The Rabbit in the Moon with new head chef
Michael O’Hare has relaunched The Rabbit in the Moon restaurant in Manchester after a three-month closure. The restaurant closed in January when head chef Luke Cockerill left and O’Hare will now split his time between The Rabbit in the Moon and his flagship restaurant, The Man Behind the Curtain in Leeds. John Granaghan has been named as head chef in Manchester and the new Asian-inspired tasting menu will include native lobster with Thai flavours and fillet of beef with salt and pepper prawn.
Mark Sargeant to open new restaurant at the Tower of London
Rocksalt chef-patron Mark Sargeant is launching a new restaurant at the Tower of London. Called Sargeant’s Mess, the all-day restaurant will serve modern British seasonal dishes created by Sargeant and his head chef Simon Oakley. Dishes will include Atlantic cod with dripping chips, mushy peas and tartare sauce, as well as roast daily specials such as crispy Gressingham duck leg with broccoli and mash.
Ondine owner Roy Brett to launch new seafood restaurant
Roy Brett, the chef-patron of Edinburgh’s Ondine is opening a new restaurant in Edinburgh’s Newhaven Harbour. A collaboration with a local fish supplier, the 50-cover Fishmarket will serve fish and chips alongside local lobster, langoustine, scallop, crab and oysters. The head chef at Fishmarket will be Ishu Mehrotra, who has worked at Ondine for the past nine years.
