The largest of the Channel Islands is a self-governing bailiwick off the northwest coast of France. On a clear day, from one of its many fortified eminences, where the old cannon have fallen silent and the defensive towers turned into bijou residences, you can see Normandy. Chef Andrew Sheridan is returning to his Worcestershire hometown of Barnt Green to open Black & Green, a 16-seater neighbourhood restaurant serving 'modern interpretations of British flavours’. The weekly changing menu will be based on local ingredients from ‘micro suppliers and neighbours’, and will - of course - have a strong focus on sustainability.
