Former Thackeray's and Vinoteca chef opens his debut restaurant in Hertfordshire
A chef who previously worked at a number of top establishments in London and Kent has opened his first restaurant in Hertfordshire. Kieren Steinborn-Busse and his wife, Natasha, launched The Falcon in Buntingford this week, serving seasonal British food in a restored Grade II-listed building. Kieren was head chef at Thackeray’s in Tunbridge Wells and was more recently at Vinoteca, overseeing six London sites. Dishes on the menu at The Falcon include Cromer crab bisque and crab rarebit; roast and confit Gressingham duck, dill-glazed turnips and carrots, and baked Braeburn apple with mincemeat ice cream.
Henry Harris to oversee the food at fourth London pub
Harcourt Inns will open its fourth pub in January, with chef-director Henry Harris overseeing the food. The Crown on Chiswick High Road follows close on the heels of Three Cranes in the City, The Coach in Clerkenwell and The Hero of Maida in Maida Vale. The head chef will be Sicilian-born Daniele Zaffora, who worked with Harris at Racine, and dishes will be ‘Mediterranean leaning’, although Sunday roasts will fly a more traditional British flag at weekends. Harcourt Inns is expected to open more pubs with dining rooms in 2019.
Nathan Outlaw announces departure from the Capital
Nathan Outlaw is closing his seafood restaurant at London’s Capital hotel. The Cornish chef, who is expected to announce plans for his next London restaurant soon, ran the restaurant for six years and says it has been a mutual decision to close Outlaw's at The Capital at the end of March 2019. Outlaw followed in the footsteps of a number of high profile chefs to run the kitchens at the Capital over the years, including Eric Chavot, Brian Turner and Richard Shepherd. During Outlaw’s time there, his head chef Tom Brown gained his own reputation before leaving to open Cornerstone earlier this year. The hotel has yet to announce who will replace Outlaw.
New opening planned for Jason Atherton
Jason Atherton is opening a new restaurant in Mayfair. The new 16-cover restaurant, provisionally called H.O.M.E. is reported to be next to his flagship Pollen Street Social, which is being refurbished in 2019. H.O.M.E. will serve a set menu of global dishes and be similar to other ‘test kitchen’ restaurants. Atherton, who closed Sosharu in Farringdon and Temple and Sons in the City earlier this year, now has 16 restaurants worldwide.
Brighton's Pascere closes with plans to relocate in 2019
Brighton restaurant Pascere is closing its doors on December 15 after the site’s lease was sold to a burger chain. Owner Amanda Menahem plans to relocate Pascere next year and says she will continue to run pop-up events until a new permanent site has been found.
