Out in the sticks, on the fringes of Ashridge Estate (NT), this reborn Victorian hostelry is now the very model of a modern country pub, complete with tasteful farmhouse-chic interiors, tiptop hand-pulled ales and a savvy all-European wine list – although the Alford’s trump card is its unwavering commitment to local ingredients. David and Becky Salisbury have been championing the cause since 1999, and the kitchen responds with a weekly menu of appealing seasonal dishes – from Ashridge venison bonbons with bramble sauce or Hertfordshire-reared beef and onion pie with creamed leeks to a tarte tatin of quinces from the Chiltern Heritage Orchard. Chatty, well-informed staff and breezy service too.
