Following a legal wrangle over the name, what was Sugo Pasta Kitchen is now Sud Pasta, although nothing else has changed. The De Martiis brothers first brought their uncompromising culinary dedication to Altrincham in 2015; nowadays, there are three further outlets (at Sale, Ancoats and, more recently, the Exhibition Manchester food hall), although the original has a close-quartered charm that continues to reward travellers – and win over the locals. Dishes sing as readily off the page as they do on the trademark Pugliese crockery. To start, there's burrata (perhaps with tomato and thyme jam, plus a drizzle of single-estate olive oil) or Swaledale lamb and pecorino meatballs with 'nonna's peas'. Then you're looking at pasta, and plenty of it: cavatelli 'in brodo' with shredded ham hock, hispi cabbage, peas and basil, or the justly lauded house ragù of eight-hour beef shin, pork shoulder and 'nduja. On the side, salads are always interesting and a jug of Pugliese Primitivo wine is a good idea; make it through to pudding and it's usually tiramisu time. Just remember that Sud Pasta is a cashless, card-only set-up.
